Very few of the Leaders and Chefs that are running our restaurants and our kitchens had the slightest clue they'd end up doing what they do. Most had very different plans. They wanted to pursue safe, sensible careers, like acting and professional golf.

So what made them change their minds? Well, we did. Heh, heh, heh!

You see, we started out by hand-picking people who really stood out in terms of their relationships with their customers and their peers; people with that little extra spark and passion. Then, we gave them a small taste of leadership - running the floor or the kitchen on a slow Monday or Tuesday.

Then, we started teaching them about leadership; about how to recognize and select great people, how to communicate, to inspire, to coach and praise their teams. Then, we gave them more responsibility. Busier nights. More customers and people to deal with. More problems to solve.

Then, we started teaching them how to run their businesses; skills like planning, budgeting, marketing and promotions, and how to execute strategies.

Then - and this is the kicker - we turned them loose. We told them: "This is your business. What are you going to do with it?"
